Gluten Free Pecan Pancakes


Ingredients:

1½ cups ground pecans

3 large eggs

1 banana, mashed

2 tablespoons liquid honey

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon

1/2 teaspoon baking soda

Pinch of salt

Coconut cooking spry or butter


Topping:

Maple syrup

Pecan halves

Berries


Instructions:
  • In a medium bowl, mix all ingredients until well incorporated.
  • Lightly coat a medium skillet with coconut spry or butter. Place skillet over medium low heat.
  • Ladle about 1/4 cup batter into the skillet for each pancake. Cook until crispy on the edges and flip. Repeat until all batter is used.
  • Hold cooked pancakes in a warm oven until ready to serve.

To Serve:
  • Top warm pancakes with maple syrup, pecan halves and your favorite berries.
  • Serve immediately.

Makes 4 servings.

Note: For people who don't like bananas, 1/2 cup of ground pecans can be used instead of mashed banana in this recipe. If the pancake mixture looks too dry and isn't holding together, add one more egg. If it looks too wet, add more ground pecans.
